Step into a centuries‑old Japanese tradition in this exclusive tuna carving experience led by Nobu Yamanashi of Yama Seafood—renowned purveyor of the highest‑grade tuna to top restaurants nationwide.
In a rare display of the Hocho Shiki, or Knife Ceremony, Nobu will masterfully break down a 140‑pound Bluefin tuna before your eyes, revealing prized cuts like otoro, akami, and chutoro. Alongside him, celebrated chef and author Kaz Matsune will transform these cuts into exquisite sushi creations as you watch—and taste—the artistry unfold.
Throughout the ceremony, Nobu shares the rituals, techniques, and flavor profiles behind each part of the fish. Guests are invited to scoop and savor some of the freshest tuna imaginable straight from the source.
Held at Technica House, Audio‑Technica’s futuristic venue, you’ll also witness the world’s first home‑use sushi‑making robot in action, demonstrated by Mitsuo Kaneko of Autec, who will guide you in crafting your own sushi and nigiri.
